Chicken in Sweet Sauce with Pumpkin Puree

Directions
Preheat the oven to 375°F (190°C).
Season the chicken breasts with salt and pepper on both sides.
Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook for about 4-5 minutes per side until golden brown.
In a small bowl, whisk together honey, soy sauce, garlic, and lime juice to make the sweet sauce.
Pour the sweet sauce over the chicken in the skillet and transfer to the preheated oven. Bake for 20-25 minutes until the chicken is cooked through and the sauce has thickened.
While the chicken is baking, prepare the pumpkin puree. Start by roasting the pumpkin in the oven until soft. Remove the skin and puree the cooked pumpkin in a blender or food processor until smooth. Set aside.
Once the chicken is done, remove it from the oven and let it rest for a few minutes before slicing.
To serve, spoon a generous amount of pumpkin puree onto each plate. Top with sliced chicken and drizzle with the remaining sauce from the skillet.
